Will pulpitis show up on an x-ray?

Yes. If a bit of ice causes pain to persist more than a few seconds, the tooth may already be dying. The degree of damage can be gauged with x-rays.

Not neccessarily, it will only appear on xray when it is infection. A dead nerve and live nerve look the same on xray. The doctor goes by your symtoms.

There are two types of pulpitis : reversible and irreversible. Radiographically pulpitis cannot be seen. If there is any change in the pulp pathology or a filling close to or on the pulp can be noticed.

Usually it depends on what type of x-ray that you have in order to tell what is going on in your mouth. Some x-rays show things that the other ones do not. I am sure that you can see pulpitis with a periapical film x-ray of the tooth that you think may have it.
