How do you make short-crust pastry?

Mix 2oz butter and 4oz flour until the mixture looks like fine breadcrumbs. Add a pinch of salt and mix thoroughly. Gradually, add water (about 5 tablespoons) and mix with a knife until the mixture firms. With floured hands, knead the dough until flexible. Roll out on a floured surface to desired thickness. Use immediately or chill for use later.

Shortcrust pastry is always half the weight of fat to all purpose flour, pinch of salt and, once the fat is cut into the flour, enough water to bind.
