Brushes have a soft and swishy quality to them. Drumsticks are hard and precise. The difference in jazz is like comparing the vibe between Swing and Big Band jazz... respectively.

Brushes are used in a smaller instrument setting such as a jazz combo rather than a large jazz band. Brushes are much more quitter then sticks. Sticks also sound more staccato then brushes. It's all about sound quality. Brushes would be more used for a ballad rather than a loud piece of music.

It will be a completely different sound. Don't ask someone else wether what it will sound like, Just go do it and you'll hear how it sounds. Try as much stuff as you can and experiment constantly and you will start to find out what you like and it will also make you a better player.
