Why is it important to stir sherbets and ice creams during freezing?

It is important to stir ice cream while freezing because there are ice crystals which are formed during the process of freezing which are needed to be removed or scrapped of and also it is recommended to allow a certain volume of air into the mixture that falls between 10% and 25% during the freezing process.

It is important to stir sherbets & ice creams during freezing,due ingredient we mix into the sherbets i.e sugar, salts & water get properly soluble so that sherbet become ice-cream we add dried fruit ,milk powder or milk, sugar etc. If the mixture is not well stir during the freezing ,than ingredient will remain in corner & affect taste.
