Popcorn pops because the heat you use to heat the kernel causes the moisture inside to heat up and expand, forcing the "POP! " of the external shell. Old popcorn can dry out, thus making it less likely to pop.

Heat makes popcorn pop - the heat causes the kernels to explode to make the popcorn. That is why it stays in kernel form until you heat it.

There is moisture inside the corn kernels. Once the corn kernels reaches the correct temperature, the moisture builds up enough gas pressure inside the corn kernel that it forces the expansion of the kernel, popping it open.

What makes popcorn pop is little water in the pop corn kernal. The moisture turns to steam causing pressure to pop the popcorn.
