Why is modern American plated service considered more efficient than some other types of service?

Plated service requires is quicker for the customer since they don't have to serve themselves and it produces less dishes to be cleaned by the waitstaff.

The food comes right to the person, and the food is also portioned out. You can use more expensive food because you know how much a person is getting.
