Truffles are expensive because they are in short supply. Truffles develop underground in association with specific tree roots. Black truffles from the Perigord region of France, for example, will only grow around oak trees. Specially trained truffle-sniffing pigs and dogs are used to find these delicacies, which are difficult to cultivate and thus must be harvested in the wild.

Well, the answer isn't really complicated. They are very rare and hard to find, as well as not very abundant. They have a specific taste and aroma.

Basically for the same reason like ginseng and other items are so expensive. Authentic truffles must be hunt out in the wild. They only grow in certain areas and most people used trained dog to locate them. Since they are hard to find people charge more money for them.

Truffles cost so much because they are labor and time intensive to produce. No one has had much luck in farming them, they need to be found in the wild. That is difficult though since they grow underground, and it is a challenge to harvest them.
