It's most likely due to lack of water, though it depends - if they are curling and trning brown at the edges this is more likely. However, it could also be due to a parasite - any parasite sucking the fluid from the leaves will cause them to curl. Try dosing with insecticide.

The leaves are curling on your new apple tree because of the weather changes in climate. In changes of weather season the leaves start to curl and they look funny.

You might want to examine the affected branches for insect invasion. Since these are new trees, because they are stressed from being moved, they may have picked up a scale infesttion.

The leaves curl due to the pest or insect presence. The tiny worms coil the leaves around their bodies to make a home from where they can get minerals sucked. So the leaves lose the temper and curl, as a result they die. This will affect the harvest.Use pesticides.
