That would more than likely be rollercoaster tycoon where you build your own rollercoaster rides. I'm not sure but I think they have three different versions of that game out now.
While there are several different Roller Coaster themed computer games on the market today, the most popular one is probably Roller Coaster Tycoon, which is currently in its third iteration.
