Several elements make a cake moist. Oil, shortening, and butter add flavor as well as moisture. Substituting applesauce for part of the grease will also add moisture, as well as eggs and liquids. Another factor in producing a moist cake is baking time. Make sure not to overbake.

Oil of some kind is the main ingredient that keeps cake moist. While the water in a cake will eventually evaporate, oil will not do this. An old folk trick is to include about 1/4 cup of mayonnaise to a cake recipe. Mayonnaise contains a lot of oil, as well as egg whites (which make cake fluffy).
