Beginning with Ash Wednesday, the 40 days before Easter is a time of rememberance, penitence and preparation for Christ's death and resurrection. During this season, converts to Christianity (called catechumens) prepare for entry into the Body of Christ. Many people will give up something or take on something extra as both an act of obedience and an offering to God.
