Use the metal tongs provided to crack the crab open wherever you see a joint. At the joints in the leg is the best place to start, and in the claws, it is best to crack it open in the middle.

Most nice restaurants will pre-crack your crab for you. I also ask the waiter before I order. They will still include the cracker at the table. I re-crack all the crab and use the small fork to pull out the meat. When dipping the crab in butter I try to blot it off before eating to avoid a mess

Crab legs are served with a pair of crab/lobster crackers that look like a nut cracker. You can also ask to have the crab legs slit in the kitchen. Blue crabs are another matter and a pain to eat in public or privately. Given the return (of food) on investment (of labor and mess), don't order them.

It is completely proper and correct to eat crab with your hands. Use a nutcracker to help open the crab up and a nut pick to help slide meat out.
