What is the process of freezing scallops after cooking?

I have cooked too many scallops and need to freeze them.

Scallops can be frozen after cooking. Put the scallops in plastic containers and freeze. The scallops will stay fresh for up to a month in the freezer.

Place Parchment paper onto a cookie sheet. Lay cooked scallops onto the parchment, without touching one another. Brush with butter, and put into the freezer until scallops are completely frozen. Usually over night. If you have a Vacuum storage device use it to seal the scallops, if not use and airtight container.

Allow them to fully cool, place into a quality freezer bag and remove as much air as possible (a vacuum sealer is even better). Then refrigerate for a couple of hours before placing in the freezer. The colder they are before freezing, the less likely ice crystals will form. Don't keep in the freezer more than a month.

Do not freeze your scallops if there are still hotl. Cool them down and place your extra scallops in an airtight plasic bags or container then freeze. However, do not freeze it too long, no more that 1- 2 weeks to keep its' freshness.

They would be better frozen uncooked. You can go ahead and place the leftovers in a shallow container and put them in your deep freeze but the tesxure and taste will not be as good.
