Greece is always first, and the host country always goes last. Countries in between may be ordered in different ways- most commonly alphabetical order, but in Beijing, they were ordered by the number of strokes required to write the country's name.

Greece always goes first because the Olympics originated there. Whoever is hosts the Olympic games is the last to walk, because it is a sign of respect and honor. The rest of the countries enter alphabetically, according to the host country's language. China was the exception because of their different alphabet. They went by stroke number as per Simplified Chinese.

The order in the opening ceremonies is alphabetical for both the winter and summer olympics. This is typically in the alphabet of the language of the host country. The exceptions are Greece who receives the honor of going first, and typically the host country chooses to follow. Closing ceremonies have less traditional.
