Stewing is the simmering of several ingredients in liquid for a long period of time at a low heat, while stir-fry utilizes high heat and oil for a very short cooking time.

Stews are cooked very slowly to let the flavours all blend together; the meat will be tender and the vegetables will be soft. There is also plenty of liquid in a stew. Stir fries are cooked very quickly over a high heat. The vegetables in a stir fry are crisp and fresh.

Stew and stir fry can contain the same things, meat and vegetables, but stir fry is rapidly cooked in a wok or skillet and stew is cooked with liquid.
