Plain vanilla is made from vanilla beans. French vanilla has more egg yolks in it. French vanilla starts out with more of a custard base.

It is in the method of preparation. Vanilla comes from the vanilla bean, and you will often find reminder "specks" of these beans within the ice cream. In contrast, French vanilla is made with eggs and resembles a type of custard before being frozen. In my opinion, both are excellent!

In vanilla ice cream, one of a number of different forms of vanilla flavorings or extracts may be used including real vanilla beans. Real beans are the source of the black specks in the most tasty varieties. French vanilla isn't really ice cream, but an egg custard rich with cream, egg yolks, and flavored with whole vanilla beans.

The French vanilla flavor is said to be generally sweet and buttery, while a standard vanilla flavor has more of a attenuated flower taste.

It is not a type of vanilla like Mexican vanilla. It is how the food is prepared; with more vanilla flavor and actual vanilla seeds than regular ice cream.
