Cake flour is lighter and finer than regular flour. If a recipe calls for cake flower, you should use that and not substitute regular flower for cake flower. Cake flower is available in your grocery store's baking section.

Cake flour is a finer grind than regular flour. Think of it as the difference between powdered sugar and regular cane sugar purchased in the five pound bags. The reason for the finer grind is a smaller crumb and a smoother mouth feel. The ingredients blend better producing a better texture.
