The best way is to just leave it out at room temperature and let it thaw. Of course that takes a while. If you're in a hurry, the microwave is fine, just use a low setting. Only requirement is that it unfreeze all the way through before it starts cooking, if you see what I mean.

To avoid salmonella never defrost meat on your kitchen counter. Defrost in your refrigerator, or micro wave, and be sure to throughly was whatever comes in contact with the meat.

To preserve the tenderness/juiciness put it in the fridge, 2-3 days. You can also leave on counter for a day. If in hurry, run under water(cold, NEVER hot).

The best way to safely defrost meat is to put it in a container in the fridge and covered. This may take a few days depending on whatever is thawing. This should be done well in advance to make sure it fully thaws before it is needed. Just check on it regularly for progress.
