What is in Mexican mole?

"Mole" comes from the Nahuatl (Aztec) word "molli" which means "sauce". There are many kinds of mole, but the most known worldwide is Poblano Mole, which is a mix of different dried chillies, chocolate, tomato, onion, garlic, sesame seeds, sometimes almonds, and spices (cinnamon, clove, etc.). It is thickened with tortilla and/or bread, and served with poultry or pork.

Oil, tomato, mexican chocolate, cinnamon, cumin, salt, sugar, black pepper, almonds or sesame seeds, ground cloves, oregano, ancho or poblano chili. Some people put in raisins and white bread to thicken.

Other than chocolate, a Mexican Mole includes either almonds or stale bread, plum tomatoes, chilies, onions, garlic, and chicken stock.

All moles begin with chili peppers of some type. Ancho, pasilla, mulato or chipotle, depending what part of Mexico you are in. Other ingredients are black pepper, cumin, cloves, anise, tomatoes, and garlic. And there is chocolate. This is a widely used sauce, and just great no matter what you put it on.

It is very easy if you go to your local grocery store and in the Mexican Isle there is a jar of Mole mix. Then you add the jar into a pan of boiled chicken and two tablespoons of peanut butter and flour to thicken if needed.It makes a lot of Mole.
