He's referring to the color of the dog. A mantle means the dog is black and white, and merle means the a gray base color with black patches (in the case of danes), so a mantle merle doesn't actually exist.

It refers to the coloring of the dog. This is a popular color as it is not seen very often. It looks a lot like a boston terrior. With the mostly white coat, and black around the face, paws and tail. They make a very pretty dog in my opnion better than a plain gray dog.
