What is a convection oven?

I recently purchased a new home that has a convection oven.

It's an oven that uses a fan to circulate heated air; this makes the food cook faster at a lower temperature, because the movement of the air strips away the cool, inert air that would normally surround cold food. You often find them used in restaurants. Starbucks, for example, uses a combination microwave and convection oven for its hot sandwiches.

Convection ovens use a fan to circulate the heat. Food cooks faster because the moving heated air moving air pushes away the thin layer of cooler air that surrounds food to insulate it. The effect is the opposite of wind child.
