What does it mean if an engine is "air-cooled"?

How else could they be cooled?

Air-cooled means that the engine is cooled by the wind chill. Other possibilities are cooling by oil or by water. Last two possibilties have one thing in common, they do transport the heat away from the engine.

It simply means that the engine's temperature is regulated by the amount of air running over it. The faster you go the cooler it'l get. You also get water cooled.
