Eating triggers the pancreas to release insulin which helps the body move the sugars out of food and convert them into usuable energy. Foods with high sugar content can cause the "over-release" of insulin, which converts sugars too quickly, causing symptoms of low blood sugar.

If you go a long time without eating you will get low blood sugar. When you eat, the sugars are broken down by the liver and transferred into the blood.
