What causes condensation on an air handler?

Air handlers are generally blowing cold (55f) air and naturally the unit casing can become cold as well. They usually are installed in unconditioned spaces. However, if the space they are installed in is very humid the moisture in the air will begin to "condense" onto the exterior casing of the unit.
