Water would work but doesn't add flavor. In a chicken dish, use chicken broth. In a beef dish, use beef broth. Use veggie broth in a veggie dish.

Balsamic vinegar in a moderate amount will do the trick.

You may use chicken or vegetable stock, water, or a splash of lemon. You may use white grape juice as well but add a squirt of leon to make it more acidic. White or red wine vinegar may be use but add a few splashes until you get familiar with the taste.

If you don't have white wine or you don't wish to cook with wine, you can just omit it. If you want the taste without the wine, they sell cooking wine in the grocery stores.
