What can I do with an unripe acorn squash now that I've cut it?

I hate to waste it.

Cook it in the oven. There are some very tasty recipes for acorn squash available. You can roast it with Chile Vinaigrette. Or scrape it out and make a soup. You can stuff it with rice, and or put brown sugar on it. I put brown rice, wild rice, and vegetable broth together in mine.

If you have already wiped down the exterior, cover the cut pieces with plastic wrap and let them sit on your windowsill for 2 days. Check the squash at this time by trying to pierce the exterior with your thumbnail. If you can't pierce the skin, your squash is ripe.

Let it sit in the fridge for a couple day and it will get soft enough so that you can use it.
