Try having an open conversation with our mother about why she dislikes your fiance so much. If possible try to have the two of them get to know each other better so they can work out their differences. If you are going to marry him it is very important that he is able to get along with your family.

Ask your mom why. Talk to your mom and see what is really going on, maybe there was a misunderstanding. Try to take them both out to lunch and see if you can just get them to talk to each other. Small step but it may pay off in the end and lead to a very helpful relationship and marraige.

The three of you should sit down and have a discussion as to why your Mother and Fiance cannot get along. Communication is key, have a serious discussion together.
