Tanned ostrich hides form a high end, strong leather and are used to produce boots and shoes, particularly cowboy boots in the United States, handbags, wallets, belts, and jackets. Luxury car manufacturers offer ostrich leather seats. A popular automotive aftermarket material, ostrich leather is also used for dashboards, door panels and motorcycle seats.

Well a lot of people like to turn it into leather. I've seen it used in custom seats for cars as well as bike.
