Well when I was in eighth grade science (we learned basic earth science i.e. rocks, earthquakes, plate techtonics and simple geology. We also learned lunar cycles, solar systems and the spheres like atmosphere, & biosphere. I am a freshman in college so I'm sure not much has changed.

Typically in eighth grade you learn more in detail about human anatomy, chemistry, and sexuality. They generally go into more depth with Sex Ed classes. Some schools have more field trips and dissect something (squid, frog). They really start to go into chemistry and preparing for high school classes.
