What are two ways in which a restaurant can offer variety in their menu items?

Use locally grown seasonal ingredients. The menu is fresh and easy to change around since ingredients and the menu can alter with the seasons. Also I could just hop down to the local market and buy just enough stuff to run a lunch or dinner special and didn't have to order bulk through supplier that wouldn't deliver for 3 days.

Allowing the customer to select from a variety of sauces for a particular entree will provide variety with a minimum of expense to the restaurant. For instance, an Italian restaurant might allow the patron to choose between marinara and meat sauce for a pasta dish.
