Dickinson's uses citric acid to preserve their preserves. It is also generally added to many products like soda. It is also naturally occurring in citrus fruits like lemons and limes.

Many brands of preserves use artificial preservatives. These are mostly added to preserve color and to prolong shelf life. Absorbic acid is commonly used in preserving food. It is even used to can at home.
