I would search for gluten free menus from restaurants which offer them and then ask the picky eater to select which items are most appealing. I would then find the recipes and through trial and error discover what the finicky eater likes. If it is for a child it might be helpful to involve him or her in the process.

You can offer potato and yams as replacements for couscous and breaded vegetables. Rice flour and taro flour products are also options as wheat bread substitutes. There are even gluten free and gluten free plus dairy free pizzas in the vegetarian section of many stores.

Potatoes are a good source or carbohydrates and can be cooked in a variety of ways to satisfy the picky eater. Most meats and vegetables also have no gluten. I would stay away from some of the gluten-free breads, crackers, and cookies. Yuck.
