Foods with simple carbohydrates, such as sweets, breads, and potatoes, raise glucose levels in the blood, to unsafe levels in diabetics. Complex carbohydrates, e.g., fruits and vegetables are okay. Eating protein with carbohydrates can slow the rise in blood sugar but not enough for that piece of chocolate cake.

Diabetics should stay away from foods that are high in simple sugars, such as regular cookies, ice cream, and candy bars. If the food contains a lot of sucrose, also known as table sugar, stay away from it. Foods high in sucrose are broken down quickly by the body and cause blood sugar, or glucose, to spike.
