Cook a ham, or beef roast the day before you need the sandwich spread. Cool the meat completely then roughly chop it up and run it through a meat grinder. Add mayo and finely chopped vegetables (onion, celery, bell pepper), season to taste.

Mix mayo with sweet pickle relish which is good on fish sandwiches. Mayo, relish, and ketchup mixed together makes a good hamburger or hot dog topping. Cream cheese mixed with drained salad olives is great spread on cocktail rye bread.

One very popular and delicious sandwich spread is cheese and onion. Finely grate some strong cheddar into a bowl and add some very finely grated and chopped onion. Add a couple of spoons of mayonnaise and a little bit of mustard and mix well using a fork to crush the onion into the mixture. Serve on bread or in vol-au-vents.

Chopped onion with canned tuna is easy. Pour off the liquid, mash the tuna with a fork, add chopped onion. Or chop boiled eggs with butter and add seasoning.
