How long is fondant good for?

I am starting to bake cakes and need to know more about fondant?

If you're buying a premade fondant, in a box, it can stay unmixed for 6 months. Fresh fondant can last for about a week, but it's best in 2 days.

Cakes go Stale and Bad. That is why you need to make the cake no more than two days before the wedding. Sorry, that is Mother Nature and I cannot help that.

Fondant comes in two forms, rolled or poured. Both are basically sugar and water cooked to the "soft-ball" stage (think fudge),cooled and stirred. Rolled fondant is rolled out like a pie crust and used as a cake covering. Poured is spread onto the cake. Fondants will last about 2 weeks in the fridge or 2 months in a freezer.

Store your fondant in an air tight container or plastic bag. Place in a cool and dry cabinet. Do not store in the refrigerator due to the moisture. Hard fondant should be thrown out. I make fondant roses, and they can last for a long time or until they break.

Hey I can actually answer a question about cakes!!! My husband bakes and he uses fondant. He states that fondant will hold pretty much indefinitely as long as it is stored in an air tight container. He keeps his refrigerated for a couple of months at a time.

Fondant is a tricky misstress. It can be frozen for up to a year, but it looses its flavor. If you make your own chill it 24hrs before use.

Fondant can stay good for a while if refrigerated. Remember to take it out, heat for 30 seconds, and knead before using.
