How long can a fresh hot batch of spaghetti sauce,30 quarts worth, cool before putting it in the refrigerator?

Any type of spaghetti will take about 10 minutes to completely cooled in order to place into the refrigerator. If you are looking to cool the spaghetti quicker then you can get the spaghetti into the ice and that will shave off the time within five minutes or less since the ice bath drop the temperature quickly.

Do not cool any food for longer than two hours or it will start to harbor bacteria. Best to separate the sauce into smaller containers for faster cooling.

Well, I would say it would take 2 hours to cool down if you put it into seperate containers, it should cool very fast. Also, if you leave the containers in front of a window, it should help with the process.

You should take the pot off of the burner to increase your cooling time. Place your pot of spaghetti sauce on a cool surface. You can place the pot or pan of sauce on some towels that have been in the freezer for 2 hours. After you do that, set the timer for 25 minutes.
