To do this you need to have a smoker. The meat is placed in it and smoked for many hours at a very low temperature, typically in the 200 degree F range. The smoke will create a layer of delicious "bark" on the ham. Once done it should be rested and then sliced. It should be moist and smokey.

Real smoking is an intensive process used to preserve meat, and not easily done at home. However, you can invest in a home smoker, or look online for "cheat" recipes using liquid smoke. Smoking adds a pleasing flavor, but again, the original purpose was to preserve meat in times when refrigeration was not an option in many homes.

You can smoke a ham in a grill or a pit. The flavor will be changed according to the type of charcoal or wood chips that you choose to use.
