Do not permit the eggs to cook more than one miute over hard shell cooking time (about 7 minutes according to the size of the egg). If your eggs do happen to get over cooked a nice little trick is to run them under warm water for a second after the eggs cool, the shell will peel right off.

After you have boiled the eggs and there done, immediately put them in icy cold water. When the egg is cold crack the egg and start to take the shell off. It should come off easy. But the egg has to be cold. A warm egg will make the shell stick.

Peel the eggs while they are still warm. Tap it all around to get a lot of cracks, and try to remove the thin film just under the shell, the shell will come off easier.
