Boil chicken broth to cover the chicken. For every quart of liquid, add 1 cup each chopped onion, carrot and celery. Season the liquid lightly with salt and peppercorns. Lower the heat to a simmer. Check with a food thermometer, the temperature should be 190 degrees. Cook until cooked through, about 45 minutes to an hour for a whole chicken.

Put the chicken in a pot so it just covers the bottom. Add poaching liquid (water, broth, or wine) an inch above the chicken. Bring it to a boil, lower the temperature to a gentle simmer. Cover for 15 minutes. Turn off the heat, and let sit for 10 minutes.

Poaching is a pretty easy cooking method. It helps to look up a recipe beforehand but basically you simply place a thawed chicken pieces into a large pot of seasoned water. You will cook the chicken until it reaches the correct internal temperature.

Put your chicken in a single layer at the bottom of the pot. Cover with poaching liquid such as water or broth. Bring to a boil, then simmer until done.
