Sweetbreads - which are thymus glands - have high fat content, so they can withstand many different cooking techniques. One of the most popular methods is breaded and fried (using a Japanese or fresh breadcrumb). Grilling is also an option, though over-grilling can lead to unpleasant chewiness. Poached sweetbreads at low temperatures are also delicious!

Sweetbreads are the certain glands of various animals: the pancreas, heart, stomach, thymus gland (from veal) and so forth. So you would order them from your butcher. The preparation process is rather involved and the cooking can be rather complex. There are lots of online sites that can guide you through the various sweetbreads and offer recipes.

My grandma makes the best sweetbread. First you take the dough balls and soak them in cold water. This is to remove any blood on them. Next put them into cold water. After doing this, then you can cut the sweetbread into any design you wish. Refrigerate them, then grill or saute them. So Good!

Mix 2 ½ cups all-purpose flour, 3 ½ teaspoons baking powder, and ½ teaspoon of salt. Combine 3 tablespoons melted butter, ¾ cup of milk, 1 egg, 1 teaspoon vanilla, ½ cup mashed bananas and ½ cup mashed kiwi fruit. Add flour mixture to egg mixture. Divide into 2 pans. Bake 1 hour at 350 degrees F.
