Brown sausage. Pour off excess grease. Add a chopped onion. Add a teaspoon of marjoram and 2 tablespoons of flour to form a roux. Add liquid such as coffee and continue cooking for about 10 minutes to get rid of the raw flour taste. Season with salt and pepper.

To make sausage gravy, cook one pound of sausage. When done, add about 3 tablespoons of flour to sausage and brown a little. Next, add 2 cups of cold milk and stir briskly to reduce lumps. Let simmer while stirring to prevent burning. Add salt and pepper to taste.

You can pick up any kind of country gravy mix packets. Cut up some sausage into little pieces, throw it in a frying pan. Make the gravy in a seperate pan. When the sausage is done cooking, and the gravy is all made, removed the gravy from the stove and take the sausage and pour it into the gravy.

Sausage gravy is basically a mix of the sausage grease and about 3 Tablespoons of flour, depending on how much grease you have accumulated in your pan.
