Marinara sauce should never be greasy. Classic marinara contains a few vegetables such as onion, garlic, and bell pepper that are sauteed in a scant amount of oil to soften them. You then add tomatoes and spices. It should be a fresh light sauce, not greasy at all.

Marinara sauce should never be greasy, there isn't any meat in it. Take 3 large cans of tomatoes, some chopped garlic, chopped onion and salt and pepper to taste. Simmer for about 1 hour. This sauce should not be boiled or left to cook for hours, it should be very fresh and zesty tasting.

There are quality ready made sauces that you can purchase. Or you can make it fresh with tomatoes and spices, no need to add any oils.

Pretty simple recipe actually. 16 oz crushed tomato (canned) or a pound and a half fresh tomatoes peeled and chopped. Garlic, onions, basil and oregano in preferred quantities. Mix and cook down to a sauce consistency, usually around 20 minutes. Some people add olive oil, which can make it greasy.
