A bisque soup is a creamy soup that does not usually have large chunks. There are many different kinds- tomato, crab, lobster, corn. You do not have to make lobster bisque.

It doesn't have to be lobster--it's bisque because of its thick, creamy texture. Saute your seafood/meat, add broth, then pure and add cream to get the right texture.

Bisque soup is traditionally made with seafood, but it can be made with anything. Bisque is any kind of thick, creamy soup using a pureed base.
