Your license is valid for the term issued. Depending on the class of license, and the state, you can renew by mail- in order to do that, consult your state's registry to see their requirements.

You can keep your driver's license. Make sure it does not expire for more than a year in your absence. You must get an license to drive in Hong Kong.

Residency for purposes of drivers license hinges upon a persons domicile. If you maintain a domicile in a State in the US, then you lawfully can keep your driver's license.

Renew it before you move to Hong Kong. Most driver's licenses last for 4 years if not I am not mistaken. If you are keeping the same residence as your license once you move back and have the correct permits to move back, you shouldn't have a problem keeping your license. Though, I am not a legal expert.
