Soak lentils overnite in a pan filled with water. This will let the bad looking lentils rise to the top so you can discard. Rinse. Add lentils to fresh water, onion chopped, sliced carrots, ham bone and cook til the lentils are done. This will be soup.

Cooking lentils is easy. You need to wash your lentils first and pick out any that look funky, and make sure there is not dirt or grit mixed in. In a large sauce-pan cover the lentils with water and boil. They usually require lots of seasoning, especially salt.

You take about two pounds of lentils, one big chopped onion, one chopped celery, a half cup jalapeno peppers, three to four chopped carrots, and a cup of tomatoes and place them in a large pot of water or chicken stock. Let cook over low heat for about one hour.

Soak the lentils for approximately 12 hours and then drain the water. Add fresh water (enough to cover) and whatever meat you choose. Cook for 2-4 hours over low heat
