How do you can potatoes?

For the first time my garden has produced an abundance of potatoes and I would like to can the extra's.

You really need to can potatoes using a pressure canner, the water bath method isn't sufficient to prevent botulism- that said, it is a straightforward canning process. Search online or get a good all purpose canning book to guide you through the process, and you may find you want to can more than potatoes, it is a very satisfying endeavor.

You want to peel and blanch the potatoes in boiling water for 2 minutes. Then put the potatoes immediately into ice water. Use sterile mason jars; add potatoes to jars and fill with boiled water. Add any fresh clean herbs you like, such as sage leaves or a rosemary sprig if you want. Seal and boil properly. Date and label.

I don't think you can even can potatoes, they won't be good after a time, because they are mostly water based.
