How do they make kettle chips?

First, slice the potatoes. Some use a mandolin slicer. Use a dutch oven with canola or other high heat oil, with temperature set to about 300 degrees, then immerse potatoes and then dab dry on paper towels. Raise temperature to 350 and repeat. When you remove the chips the second time, salt them to taste.

You basically slice your potatoes very thinly and fill a kettle full of oil, or whatever type of cooking medium you would like. Drop the potatoes into the kettle and there you go.
