How do I make German Potato Salad?

Answer by  msbee (484)

Slice into chunks and boil potatoes until tender. Drain water and add 5 hard boiled eggs, sliced into chunks. Take 5 strips of bacon and crumble into small pieces. Mix all ingredients in a bowl, add diced onions and celery and one cup of mayonnaise. Add salt, pepper and lemon juice to taste.

There are basically two ways. In Northern Germany, mayonnaise is a must. In Southern Germany, this is frowned upon (to put it nicely). The South uses clear meat broth instead, to make theirs creamy. I guess diced onions, boiled eggs and apples are common in both parts.

German Potato salad is easy; it uses brown mustard as the dressing, and has no mayonnaise. Start with cooked, diced potatoes and brown mustard, and then add whatever else you like. Some common additions are onions, crumbled bacon, and a little oil.
