If your hands are dry, they can often crack especially in the winter months. This can cause garlic to feel like it is burning your skin. This can also happen if you cut your nail too short. Keep your hands soft not chapped. After using garlic, wash your hands thoroughly.

The garlic is seeping into the poors of your skin, and is causing the burning, You could put gloves one while cutting them next time.
