High fat cakes usually contain 3 or more eggs plus vegetable oil or butter. Low fat cakes usually substitute applesauce and use no butter or oil.

Fat, whether it is butter, margarine, lard, or oil, makes a cake softer and fluffier. A high-fat cake will contain three times the calories of a low-fat cake. A low-fat cake will be denser and will not go stale as quickly.
